Warm Butter Bean Salad

This dish is very simple and takes about 15 minutes from start to finish, perfect if you’re in a hurry or if you want good food the fast way! The base of this dish is very Spanish inspired and it is tasty, yet quite light. You can also make this dish with other types of beans, but butter beans are very large, substantial, and have a great soft texture to them which makes them perfect as a standalone main ingredient.

Ingredients

1tbsp olive oil 
350g cooked / drained butter beans
2 medium green peppers
4 large cloves of garlic
1 large ripe tomato
1tsp pine nuts
Pinch of oregano

Serves 2 medium portions. 295 kcal per portion.

Dice the peppers finely and gently fry in the oil. Dice the garlic and add to the peppers once the peppers are cooked, which should only take 5 minutes or so, as the garlic cooks very quickly. Add the pine-nuts and fry and once the mix is thoroughly cooked, add the finely chopped tomato and let it dissolve with the heat to make a rustic sauce, adding a pinch of oregano at the end. This should only take a few minutes on a medium heat.

Season to taste and add the drained butter beans. Stir into the sauce thoroughly and allow the beans to warm up. The easiest way to do this is to cover and turn the heat to very low for a minute or so. Serve and enjoy!
