Warm Chorizo Salad
Chorizo is a spicy Spanish sausage that has become increasingly popular in many countries over the last few years and can now be bought in many supermarkets. Chorizo is not hot spicy, but it has a wonderfully intense and quite unique flavour. It can also be eaten cooked or uncooked as it is already cured, and it is perfect for adding into and spicing up a salad. This particular warm salad is very easy to prepare. The only time consuming bit is boiling the potatoes, but other than that it only takes minutes to prepare.
Ingredients
- 100g (1 small sausage) Chorizo
- 300g New potatoes
- 400g Cooked chick peas (garbanzo beans)
- 6 Cloves of garlic (large)
- 2 Tomatoes (medium size)
- 1 tbsp Chopped fresh parsley
- 1 tbsp Olive oil
Serves 2 portions. Approximately 710 kcal per portion.
First of all, put the new potatoes to boil. Once they are nearly ready, peel the chorizo sausage and dice as best you can into small pieces. It is best to do this if the chorizo has been in the refrigerator as it will be firmer and easier to cut. Heat up a pan and add the chorizo. There is no oil necessary at this point as there is enough fat in the chorizo to make it cook by itself. Quickly peel and dice the garlic and add to the chorizo. Fry the garlic until they start to caramelise and become crispy.
Drain the potatoes and add to the chorizo and garlic, add the chick peas and stir well, remove from the heat and place in a large serving dish. Next, chop the tomatoes and the parsley and add to the rest.
As a final step drizzle about 1tbsp of olive oil, season and serve!
Suggestions: If you are pressed for time you can use already cooked canned potatoes. However it is best not those which have a “hint of mint” as they will detract from the flavour. Also, the chick peas can be used already cooked, from a can. Garbanzo beans are a larger variety of chick peas which are softer.
