Aubergine and Oyster Mushroom Stew

This dish is not a stew in the traditional sense, but has a middle-eastern influence and is quite light yet satisfying. Oyster mushrooms have a wonderful texture, almost meaty consistency, and a delicate flavour that lends itself  well to withstanding stronger flavours without being lost. They can be bought from some supermarkets but if you can’t find these then large mushrooms can be used as a substitute. They should look firm and succulent, although semi dried varieties are also sold which rehydrate themselves when cooked.
